These vegan chocolate chip muffins are quick and easy to make. They are moist and fluffy, and they're great for a snack or treat. Simple pantry items are all you need to make them, and they're ready in no time!
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsweetened almond milk
- 1/4 cup vegetable oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
- 1/2 cup vegan chocolate chips
Instructions:
Warm the oven up to 375F 190C and put paper liners in a muffin tin
Sift the flour, sugar, cocoa powder, baking powder, baking soda, and salt together in a large bowl
Mix almond milk, vegetable oil, apple cider vinegar, and vanilla extract in a different bowl using a whisk
Add the wet ingredients to the dry ones and mix them together until they are just mixed
Do not mix too much
The vegan chocolate chips should be carefully mixed in
Fill up about two-thirds of the way to the top of each muffin cup with batter
Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Take out of the oven and let cool for 5 minutes in the pan
Then, move to a wire rack and let cool all the way through
