Stuffed Artichoke Soup



You can make this Stuffed Artichoke Soup with the flavors of stuffed artichokes. It's a warm and comforting soup. This is a tasty way to enjoy the unique taste of artichokes. It's made with quinoa, tomatoes, and fresh herbs.

Ingredients:

  • 4 large artichokes
  • 1 cup quinoa
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can 15 oz diced tomatoes
  • 4 cups vegetable broth
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup nutritional yeast
  • Salt and pepper to taste

Instructions:

To get the artichokes ready, cut off the tough outer leaves and trim the tops

Carefully remove the choke and inner leaves to make the shape of a bowl

Put the quinoa aside after running cold water over it

The diced onion and minced garlic should be cooked in a large pot until they become soft

Do not forget to rinse the quinoa before adding it to the pot

Once it starts to boil, lower the heat and let it cook slowly for 20 to 25 minutes, or until the quinoa is fully cooked

Cut up the artichoke leaves you took out and add them to the pot while the soup is simmering

Cut up the parsley and nutritional yeast and mix them in

Add pepper and salt to taste

When the soup is done, pour it into the artichoke bowls that have been set up and serve it hot
