Gluten-Free Bacon Cheddar Cauliflower Tots



Instead of regular tater tots, try these gluten-free Bacon Cheddar Cauliflower Tots. They taste great and are better for you. They taste great and are made with cauliflower instead of potatoes, so they're great as a snack or starter.

Ingredients:

  • 2 cups cauliflower florets
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup gluten-free breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1 egg
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray

Instructions:

Preheat your oven to 400F 200C and line a baking sheet with parchment paper

Lightly grease with cooking spray

Steam the cauliflower florets until they are tender, about 5-7 minutes

Drain and let them cool slightly, then chop them finely or use a food processor to create cauliflower rice

In a large mixing bowl, combine the chopped cauliflower, crumbled bacon, cheddar cheese, gluten-free breadcrumbs, grated Parmesan cheese, chopped green onions, egg, garlic powder, salt, and pepper

Mix until everything is well combined

Using your hands, form the mixture into tots or small cylindrical shapes and place them on the prepared baking sheet

Bake in the preheated oven for 20-25 minutes or until the tots are golden brown and crispy

Serve hot with your favorite dipping sauce or enjoy them on their own as a healthier tater tot alternative
