Ingredients:
- 2 sweet potatoes, peeled and diced
- 1 onion, thinly sliced
- 2 tablespoons olive oil
- 1/2 pound sausage, crumbled
- 4 eggs
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Heat olive oil in a large skillet over medium heat
Add sliced onions and cook, stirring occasionally, until they caramelize and turn golden brown, about 20 minutes
Remove from skillet and set aside
In the same skillet, add diced sweet potatoes and cook until they are tender and slightly crispy, about 15-20 minutes, stirring occasionally
While sweet potatoes are cooking, in another skillet, cook the crumbled sausage until it's browned and cooked through
Push the cooked sweet potatoes to one side of the skillet, and crack the eggs into the other side
Cook the eggs to your desired doneness, either sunny-side-up or over-easy
Season the sweet potatoes with salt and pepper to taste
Mix in the caramelized onions and cooked sausage
Serve the sweet potato hash topped with the cooked eggs
Garnish with fresh parsley and your favorite hot sauce, if desired
